Healthy Cooking Tips for Vegetables
These are some healthier ways to prepare tasty vegetables.
Roasting
Uses high heat to crisp vegetables.
- Cut up veggies in about the same size and spread evenly in a large sheet pain.
- Coat them with oil (generally using about 1 tbsp oil for 1 pound veggies).
- Roast them in the oven (usually 425F), stirring halfway through until cooked (usually 15-20 minutes).
Sautéing
Uses high heat with a small amount of oil to cook quickly.
- Cut up veggies in small slices or cubes.
- Heat them in a skillet on medium-high heat using just enough oil to coat the bottom of the pan.
- Keep veggies moving until slightly browned and cooked through.
Blanching
Uses boiling water plus an instant ‘chill’ to keep color and texture. This is a great technique to cook veggies you need to freeze and save for later.
- Cut up veggies.
- Bring a large pot of water to boil and put cut up veggies in the pot and cook only 2-4 minutes.
- Remove and immediately put in an ice bath or run under cold water.
Grilling
Uses direct heat to give a smokey flavor. Try this with veggie skewers or foil with a light coat of oil and seasoning.
- Cut up veggies.
- Prepare them for your grilling method and seasoning.
- Cook the sliced veggies on a grill with medium-high heat for 3-5 minutes/side.
